Menu Plan Monday

Another week of new recipes for us.  We did fairly well last week in staying on our menu plan.  Always learning and adjusting to make our life more organized.  Here is this week's menu plan.

Friday - Buffalo Chicken Strips and Cheese Fries (we were so bad....but calories don't count on Friday, right?)

Saturday - Out to Logan's Roadhouse with the in-laws

Sunday - Crockpot Roasted Chicken, Sauteed Squash and Zucchini, Loaded Potato Casserole

Monday - Frozen Pizza (it's class night for me and Hubs' makes dinner)

Tuesday - Tavern Chicken, green beans, and garlic rolls

Wednesday - Taco Soup with Mexican cornbread
Thursday - Teriyaki Chicken, White Rice, and Chinese Chicken Salad

Menu Plan Monday

This week's goal was to make make new meals or meals we haven't had in a while.  This week was probably the first time Hubs and I have sat down together to make our plan.  Hopefully this can become a weekly routine so that we both have an interest in our menu plans.  Here is our list for this week...


Saturday  - Pioneer Women's Chicken Spaghetti with garlic bread
First time making it.  Delicious.  Definitely Hubs' approved.
Sunday - Out - The Cheesecake Factory

Monday - French Onion Burgers and French Fries

Tuesday - Easy Chicken Parmesan and Baked Pasta with Rolls

Wednesday - Roasted Chicken with sauteed vegetables, corn, and rolls
Thursday - Grilled Chicken with fettuccine Alfredo

And yet another week into this new year.  Is it bad that it doesn't feel new?  But I'm determined to continue to organize...especially my meal planning.  And here it is!

Saturday - Junk food!  Cocktail Meatballs and Queso Dip

Sunday - Chicken Junk (Chicken, Zucchini, Squash, and Onions with marinade and garlic).  YUM!

Monday - Spaghetti

Tuesday - Nachos - chips, beef, refried beans, cheese, and sour cream

Wednesday - Grilled Chicken and Fetticini Alfredo

Thursday - Cowboy Stew

Friday - Grocery night!

Menu Plan Monday

So I'm proud of our first week of 2012...as far as menu goes.  We either stuck to the menu or improvized with what we had in the pantry.  We are trying not to eat out but we did end up having dinner with my in-laws but since that wasn't just us...I decided it was ok.  I'm couponing and working my menu to ad match so let's see how next week's shopping trip goes.

Here is our menu for this week:

Breakfasts:
Cereal (dry or with milk)
Biscuits
Egg in a Basket

Lunches:
Chef Boyardee (me)
Lean Pockets (hubs)
Leftovers

Dinner:

Saturday - Out with In-Laws

Sunday - Homemade Chinese Food - Chinese Chicken Salad, Fried Rice, and Eggrolls

Monday - On Our Own - The National Championship is tonight and hubs will be rooting on our Alabama Crimson Tide with his dad.  I have class until 8 but will join them (hopefully by halftime).

Tuesday - Red Beans and Rice and Cornbread

Wednesday - Chili and Grilled Cheese Sandwiches

Thursday - Herb Marinaded Grilled Chicken over Fetticini Alfredo and Rolls

Friday - BBQ Roast in the Crockpot

Menu Plan Monday

First Menu Plan of the Year!  One of my resolutions for the year is to plan our menus and really stick to our menu and grocery list.  We overspend and waste too much for two people so I'm looking at ways to streamline our shopping.  Here is our first week...

Saturday - New Year's Eve - Skillet Hamburgers and Rotel Cheese Dip

Sunday - Homemade Corn Chowder

Monday - Out - My in-laws treated us to dinner at a local steakhouse

Tuesday - Meatloaf (1st time ever making it), Mac n Cheese, Green Beans, and Cornbread

Wednesday - Grilled (Foreman Style) Chicken over Fetticini Alfredo, Green Beans, Rolls

Thursday - Teriyaki Chicken, rice, white corn, and rolls

Friday - Grocery Day so probably out

A Merry Little Christmas

We began our Christmas a week early with a dinner with close friends.  This is the third Christmas we have celebrated with Amanda, Big N, and Little N. We also invited my cousin K and her friend C.  We had a huge spread of traditional holiday favorites.  We had homemade mac n cheese, dressing, green bean casserole, corn casserole, hashbrown casserole, ham, and rolls.  It was delicious.

Little N had a plateful.  It is so hard to watch him grow up.  Our first Christmas together, he was only a year old!  Time flies!

 I was extremely proud to duplicate my mom's chicken and dressing (minus the chicken).  It was my first attempt and a complete success.

We played Harry Potter themed Scene It.  Nicholas loves Harry Potter.

 Bobby shared his wand with Nicholas.  It made his night.


We had lunch on Christmas Eve with Hubs' aunt and her family.  We gathered at her house for another spread that included chicken and dressing, turkey, honey-glazed ham, green beans, and rolls.

 I have always loved this decoration that she hangs in her hallway.  One year, it might go home with me.
 I use almost the same decoration at home and I love this look.  Her tablescape was very festive.


Christmas Eve night is always spent at my parent's house.  We choose a food theme and chow down. In the past we have had a Mexican buffet and Chinese buffet.  This year, we chose snacks and had a HUGE variety of food including taco dip, meatballs, chicken fingers, taquitos, and so much more that I cannot even remember!

 My parents' house is decorated top to bottom.  I love it. 

We enjoyed a busy Christmas weekend with lots of family time, food, and laughs.
