Menu Plan Monday

I am officially addicted to my grill.  I am really loving summertime foods.  With our three day weekend, we loaded up with tons of grill-friendly foods.  And I have been scouring the internet for grilling recipes...I have everything from kabobs to cabbage to pineapple!  Here is our Memorial Day weekend menu plan and throughout this week!

Saturday - Steak and Chicken Fajitas (with homemade fajita mix), Mexican rice, and warm bean dip 

Sunday - Cook Out with my Parents.  Ribs, Pork Steak, Hamburgers, and Smoked Sausage on the grill.  Potato Salad, Cole Slaw, Baked Beans, Grilled veggies, cold watermelon, and Four Layer Delight Pie.

Monday - Dinner with In-laws - Steak and Grilled Chicken (with whatever sides my mother-in-law prepares).

Tuesday - Buffalo Popcorn Chicken and Home Fries

Wednesday - Pizza Rolls

Thursday - Monterrey Chicken with roasted potatoes and green beans

Friday -Eat Out!

Bad Blogger

I am not a very disciplined blogger.  I don't blog regularly but I need to.  I love looking back at the log of my life and reliving those moments.  This year as seriously flown by so far.  I cannot believe May is coming to a close.  I look back to see what I have accomplished and it doesn't seem like a lot but then again it is full of tiny moments of joy and memory-making.
Here is a glimpse into what we have been up to...

At the end of March, we attended Hubs' 10 Year Class Reunion.
It was a lot of fun to spend time with his classmates and two of their favorite teachers.  They went to a very small private Christian school and their graduation class had less than 20 people.  There were a lot of laughs and some amazing food at Top of the River.

In early April, our best guy Nicholas started his first year of t-ball.  It was so much fun watching those kids play ball.  Nicholas is quite the little ball player.  We attended all but one game and got just as emotional as the parents.

The first week of May, we went on vacation!  Hubs, K, and her friend C visited the Smoky Mountains for 4 days.  It was a lot of fun.  We spent a lot of time sightseeing and eating some amazing food!
Dollywood!  One of my favorite places.  We enjoyed a full (hot) day.

Food.  We ate some pretty amazing food.  This dinner was at Bennett's Barbeque in Gatlinburg.  Delicous!

We spent about half a day in Cades Cove.  It is a trek up there but it is beautiful.

We ran into a lot of traffic on the way back...but we soon found out why..

For  Hubs' birthday, I bought tickets to see Jason Aldean, Luke Bryan, and Lauren Alaina.

We have had a fun and eventful Spring.  Looking forward to lots of swimming and grilling this summer!  And a fall beach trip! 

Menu Plan Monday

We bought a grill!  Well, we have a gas grill but it is huge and for some reason seems like it is always out of gas.  So for convienence sake (and since our back porch is tiny), we bought a small charcoal grill.  I have never cooked on charcoal so I was a bit nervous but our first attempt went really well!  So here's hoping to a summer filled with good grilled meats and veggies.  Here is this week's menu...

Saturday - Out

Sunday - Grilled Hot Dogs and Smoked Sausage and Fries

Monday - Sausage Potato Skillet (I'm doing a variation on this recipe.  I am using regular smoked sausage instead of Italian Sausage), Blackeyed Peas, and Cornbread.

Tuesday - Grilled Chicken, Roasted Potatoes, Corn on the Cob, and Rolls

Wednesday - Grilled Hamburgers and Hot Dogs, Baked Beans, and Potato Salad

Thursday - Breakfast

Friday - Trip to Sam's to stock up on meat and probably pick up something easy for dinner!

Menu Plan Monday

I'm very excited with recent weight loss and have become so inspired to do even more.  I'm trying to make dinner lighter while still enjoying our favorites.  This is my first entire week without classes and I'm so happy!  Here is our menu plan...

Saturday - Out for Dinner and a Movie.  We saw Dark Shadows.  I don't recommend it.  Very disappointing.

Sunday - Lunch with my mom and family and Dinner with my in-laws all for Mother's Day. 

Monday - Hamburger Steaks with onions, green beans, loaded potato casserole, and rolls

Tuesday - Cheeseburger Casserole and Baked Potatoes

Wednesday - Stovetop Chicken, mashed potatoes, vegetables, and rolls

Thursday - Concert Night - Jason Aldean and Luke Bryan (Hubs' birthday gift)

Friday - Steak Sandwiches and Home Fries

Menu Plan Monday

Late getting my menu plan posted but it is here!  We had a crazy busy weekend full of family, friends, and Hubs' birthday.  Oh and studying...I had a major final today!  Now that the test is out of the way, I'm free until June.  Oh thank you Lord!!
Here is our menu...

Saturday - Family dinner for my aunt and uncle's 50th wedding anniversary

Sunday - Out with my parents and inlaws for Hubs' birthday dinner.

Monday - Final Day!  Took Hubs to The Cheesecake Factory for lunch and with my final at 6:30, we are having pancakes and bacon for dinner.

Tuesday - Taco Salad with lettuce, tomatoes, cheese, and sour cream

Wednesday - Chicken Junk - chicken, squash, and zucchini sauteed in marinade over linguine

Thursday - Stovetop Chicken (in bbq sauce) with loaded potato casserole, green beans, and rolls

Friday - Grocery shopping!
